Are you ready to satisfy your sweet cravings without derailing your keto journey? These keto-friendly Super Greens cookies are the answer! 🌿

Super Greens Cookies

INGREDIENTS:

  • 75g butter (salted or unsalted – your call!)
  • 5g Erythritol (sweeten it up, guilt-free!)
  • 20g Granulated Stevia (for that extra sweetness with a sugary / grainy texture!)
  • 75g almond flour (the keto superhero of flours)
  • 25g vanilla protein powder (hello, muscle fuel!)
  • A dash of vanilla essence / Flavour Drops (for that irresistible aroma)
  • A scoop of Super Greens Powder (because we’re all about that wellness boost!)

METHOD:

First, let’s get creamy! Mix together the butter, erythritol, granulated stevia and a touch of vanilla essence / Flavour Drops until it’s a sweet symphony.

In another bowl, the magic begins! Combine the almond flour, super greens powder and protein powder. Green goodness, ahoy! 🌱

Slowly introduce the dry mixture into your buttery dream mix. Stir it up until they’re fast friends.

Super Greens Cookies Dough

It’s dough time! Roll up your sleeves and mold that mixture into a delightful dough ball. Let it chill in the fridge for 30 minutes to an hour – it’s going to thank you later.

Keto-Friendly Super Greens Cookies Recipe

Now, get rolling! Lay out your dough between sheets of greaseproof paper. Roll it to about just over half a centimetre thickness. You can always roll it out again (it’s impossible to get all 15 cut in one go – trust us, we’ve tried!)

Cookie cutter time! Make 12 – 15 scrumptious biscuit-sized shapes depending on how thick you’ve roll out the pastry. There’s no right or wrong way!

In they go! Preheat your oven to 180 degrees and after that bake the super greens cookies for around 5 minutes. Keep an eye on them; you’ll know they’re ready when the edges have a lovely golden hue. This happens in a split second – keep an eye on them. If you overcook them, they become dry and mealy and not sweet and crumbly!

Patience, my friend! Let your creations cool down, and then pop them into the fridge. However, what you get is pure cookie perfection – crumbly, buttery and oh-so-delicious. Your sweet tooth’s new BFF! 🍽️
